Some weeks are more of a struggle than others. Sometimes this being healthy and losing weight thing really is a pain in the butt. Sometimes a girl just wants to eat cake. And eat cake I did! Oops! I had a disappointing weigh-in on Saturday, those same pounds go away and come right back, but I will not let it get me down. I see random changes in my body; my wrists have gotten smaller, which I only noticed because I had to tighten the band on my FitBit. (Just what everyone girl hopes for when the want to lose weight, smaller wrists? Ha!) All those extra strength training classes seem to be paying off because I see a faint line of a muscle on my bicep…and I find myself being able to use heavier weights during classes, as well. So, maybe it can’t just be about the pounds on the scale, but about those little changes as well.
Needless to say on Saturday I had a big ole homemade pasta and cake cheat meal, which stretched into Sunday; downside of homemade cooking is there are always irresistible leftovers. (Yes, that is the pasta drying on my bed…deep down I am an old Italian Grandmother!)
But I am back on track for week. After cooking ALL day on Saturday, I knew meal prep and my own personal creativity was going to be at an all-time low come Sunday (which is why I didn’t share a recipe this week, please forgive me!)…so I stuck with trying a new SkinnyTaste recipe, Baked Shrimp Taquitos, and let me tell you that they are AMAZING and really easy. I think I will use this technique to make all kinds of taquitos!
Also, as a way to make my cheat meal(s) feel less awful, I am sticking to salads for lunch and a salad with my Homemade Chicken Tenders for dinner a couple nights this week. Really pumping up the veggies.
Also, I made it a goal this week to drink lots and lots of water. So, I’m bringing a cup with ice and lemon to work and to just keep refilling all day long. Hopefully, next week the scale will also start to show some change in the right direction, otherwise I’ll just blame it on the damn (delicious) pasta!
